A pavement milling machine driving control method. The method comprises: controlling a milling rotor to descend and begin cutting pavement, and obtaining the speed of descent of the milling rotor, an engine rotating speed, and an engine load rate; according to a preset corresponding relationship model, determining a target engine rotating speed causing the output power of the engine to match the engine load rate; adjusting the engine rotating speed according to a target engine rotating speed; obtaining a driving control instruction, and according to the driving control instruction, controlling the pavement milling machine to run and perform cutting work; and obtaining the engine load rate of the pavement milling machine during the driving process, and controlling the driving speed of the pavement milling machine according to the engine load rate. The method adaptively adjusts the engine rotating speed and the driving speed according to the properties of a pavement material, so that the output power of the engine is matched with the load rate of the engine, thereby decreasing energy consumption and improving production efficiency. Additionally provided are a driving control system and a pavement milling machine.
