Abstract:
Provided are a souffle pancake producing method and device with which it is possible to provide souffle pancakes that do not readily deflate. This souffle pancake producing device is characterized by comprising: a firing device provided with a conveyance device, a firing plate that is attached to the conveyance device and is continuously or intermittently circulated and conveyed, a heating unit that extends in the conveyance direction of the firing plate, and heats and fires, through the firing plate, dough filled on the firing plate, an inversion unit that is present midway of the heating unit or between two heating units present on the upstream side and downstream side in the conveyance direction, and that inverts the dough, one surface of which has been fired, and a detachable heat retention cover that covers the top of the dough during firing of the dough and suppresses diffusion of water vapor from the dough; and an oven which is provided with a conveyance device for conveying the dough, both top and bottom surfaces of which have been fired by the firing device, and a heating unit for heating the dough during conveyance from above or below, and which heats the dough fired by the firing device within a prescribed time after firing to perform heat firing from all surfaces including the dough side surfaces.
