Abstract:
The present invention relates to a raisin sauce and paste in which raisins are colloidalized and, particularly, to a production method for a colloidal-particle-type raisin sauce and paste, which immerses raisins in water or grinds the raisins in a blender so that the moisture content of the raisins becomes at least 25% and then injects the raisins into a colloid mill, or which grinds the raisins in the blender and processes the raisins so that the moisture content of the raisins becomes at least 25%, which has a critical significance, and then injects the raisins into the colloid mill. The raisin colloidal paste and sauce according to the present invention have increased preservability as colloidal particles stably dispersed in water and can be used for application in various foods, and, thus, are an invention that is industrially very useful.
