Abstract:
The present invention relates to a Saccharomyces cerevisiae strain, which is a novel yeast strain, for producing a mucic acid by fermenting a galacturonic acid, and an optimal culturing method for increasing a production of mucic acid by means of same. The strain of the present invention has enhanced galacturonic acid consumption rate and mucic acid producing ability compared to an existing strain, and is characterized by greatly enhanced producing ability of the mucic acid as biomass.
