Abstract:
Provided are a glycosyltransferase OsUGT91C1 mutant and the use thereof. An amino acid sequence as shown in SEQ ID NO:. 1 is obtained by means of mutating an amino acid at position 208 from Phe to Met on the basis of the amino acid sequence of glycosyltransferase OsUGT91C1; and an amino acid sequence as shown in SEQ ID NO: 2 is obtained by means of mutating an amino acid at position 208 from Phe to Met and mutating an amino acid at position 379 from Phe to Ala on the basis of the amino acid sequence of glycosyltransferase OsUGT91C1, wherein the amino acids at positions 1-14 of the above-mentioned two mutants are redundant, and can be completely removed or changed without affecting normal enzyme activity. The mutant has an improved ability of catalyzing the same normal reaction, further removes the disadvantages of side reaction of the original OsUGT91C1 enzyme, and can catalyze the generation of a series of stevioside products including Reb E.
