Abstract:
The present invention pertains to a fat bloom prevention agent for tempering chocolate. The fat bloom prevention agent contains sucrose fatty acid ester. The constituent fatty acid-derived structural unit α of the sucrose fatty acid ester has a C12-16 saturated fatty acid-derived structural unit A, a stearic acid-derived structural unit B, and a C16-22 unsaturated fatty acid-derived structural unit C. The molar ratio of said A to said C, the molar ratio of said A to said B, the content of said C, the content of a C12-22 saturated fat acid-derived structural unit in said α, and the ratio of the content of a C16 saturated fatty acid-derived structural unit to the content of the C12-22 saturated fatty acid-derived structural unit are within specific ranges.
