Abstract:
For equol manufacture using microorganisms, the present invention provides a method by which equol can be effectively manufactured at safer and lower hydrogen concentrations than in the past. The present invention provides an equol manufacturing method for producing equol, the manufacturing method comprising a step for fermenting, by using microorganisms having the capability to assimilate an equol starting material and produce equol, at least one type of equol starting material selected from the group consisting of daidzein glycoside, daidzein, and dihydrodaidzein under a gas phase comprising one or more types of gases containing hydrogen, the manufacturing method being characterized in that in the fermentation step, a fermentation tank for 100 L or more of a culture solution is used, and i) stirring is implemented in the fermentation tank at a stirring power of 0.1 kW/kL or greater, preferably 0.2 kW/kL or greater, and more preferably 0.4 kW/kL or greater, and/or ii) the gas is introduced by using a sparger having a pore diameter of 2 mm or less, preferably 1 mm or less, and more preferably 0.5 mm or less.
