Abstract:
[Problem] To develop a novel bitterness masking agent for potassium chloride, a production method including the masking agent, etc. [Solution] A bitterness masking agent for potassium chloride that contains Peru balsam essential oil as an active ingredient. Preferably, the bitterness masking agent further contains one or more selected from the group consisting of arginine, glutamic acid, lysine and citrulline. Also preferably, the bitterness masking agent further contains one or more selected from the group consisting of acetoin, diacetyl and 2,3-pentanedione.
