To provide a method for effectively sterilizing bacteria of the genus Alicyclobacillus without using hot water sterilization.
This sterilizing method of the production line for the beverages such as fruit juice is characterized in putting hypochlorous acid of 10 ppm or more in weak-acid and ordinary-temperature or warming wash water in the production line for beverages such as fruit juice, and sterilizing thermoduric acidophilic bacteria (TAB) in a tube under stationary or flowing state of the line. When changing the production of a certain type of fruit juice to the production of another type of fruit juice, this sterilizing method of the production line for the beverages such as fruit juice is characterized in putting hypochlorous acid with effective chloride concentration of 10 ppm or more in the weak-acid and ordinary-temperature or warming wash water, sterilizing thermoduric acidophilic bacteria (TAB) in a tube under stationary or flowing state of the line and eliminating the odor of the juice in the previous production.
