To provide a means for efficiently bringing a substrate into contact with a lipase in the surface layer of a yeast cell by giving to the cell a cellular affinity to an organic solvent in order to apply a yeast presenting a phospholipid-metabolizing enzyme in the surface layer to the synthetic reaction of a functional phospholipid.
An immobilized phospholipid-metabolizing enzyme is treated by a surfactant. The immobilized phospholipid-metabolizing enzyme treated by the surfactant is obtained by a step of bringing the immobilized phospholipid-metabolizing enzyme into contact with the surfactant; and a step of washing the immobilized phospholipid-metabolizing enzyme with distilled water. This enzyme is available to efficiently synthesize a functional phospholipid and allows to simplify the present production process of a functional phospholipid. Therefore, this enzyme allows to greatly reduce the cost of phospholipid production.
