PURPOSE: To obtain the subject glycyrrhetinic acid derivatives suitable for a sweetening for foods or medical drugs by culturing hair roots of a ginseng in a culture medium containing glycyrrhetinic acid and then carrying out solvent extraction of the specified glycyrrhetinic acid derivatives from the cultured material.
CONSTITUTION: Hair roots of a ginseng is cultured in a culture medium containing 18β-glycyrrhetinic acid and the resultant cultured material is subjected to solvent extraction to obtain compounds GA-4-GA-6 of the formula. The objective glycyrrhetinic acid derivatives can be obtained thereby. In addition, GA-5 is preferable as the above-mentioned compound of the formula and the resultant objective derivatives are preferably used as a sweetening.
