Abstract:
The invention relates to a flexible rice milling method. Firstly, brown rice is soaked in composite enzyme liquid of cellulase, polygalacturonase and protease, subsequently, microwave heat treatment is performed, and then the rice is milled. According to the flexible rice milling method, composite enzymes act on cortical cellulose and part of aleurone protein of the brown rice, so that the cortical hardness of the rice is reduced; traditional three rice milling procedures are reduced to two or one rice milling procedure, so that the rice milling pressure is reduced in a rice milling process, the rice milling rate is reduced, and energy consumption is reduced; additionally, a certain degradation effect is achieved on heavy metal and pesticide residue which are partially combined with the cortical cellulose and the protein, so that the edible safety of the rice is guaranteed; and by adopting microwave treatment, the residual enzyme activity of the additional enzyme liquid is eliminated, and the initial microorganism amount of raw materials is reduced. Compared with a single enzymolysis method or other enzymolysis treatment methods, the flexible rice milling method has the advantages that the rice milling efficiency can be improved, the risk of harm of the heavy metal and the pesticide residue in the rice is reduced, and the quality stability of the rice during late storage can be guaranteed.
