PURPOSE: To obtain the title composition capable of producing ascorbic acid-2- phosphate efficiently and stably from ascorbic acid and a phosphoric acid donor, comprising a solution containing an enzyme showing activity of forming ascorbic acid-2-phosphate and a specific adsorbing resin.
CONSTITUTION: The aimed composition comprising (A) a solution containing an enzyme showing enzymatic activity of forming ascorbic acid-2-phosphate from ascorbic acid and a phosphoric acid donor and (B) an adsorbing resin of phenol-based macroporus type. The solution obtained from Pseudomonas azotocollingans ATCC 12417 is preferable as the component A. A method of packing a column with a resin and passing an aqueous solution containing an enzyme through the column is preferable as the method of adsorbing an enzyme.
