To obtain the subject bacterium culture solution capable of efficiently producing a highly docosahexaenoic acid (DHA)-containing phospholipid and 2- acyllysophospholipid in large amounts by inoculating a docosahexaenoic acid-producing bacterium in a culture medium and subsequently shaking and culturing the bacterium.
This bacterium culture solution having a phospholipase A1 activity and useful for lipid biochemical researches, phospholipid modification, such as the production of a highly DHA-containing phospholipid or acyllysophospholipid, is obtained by inoculating a docosahexaenoic acid-producing bacterium such as a bacterium belonging to the genus Shewanella [e.g. Shewanella benthica-analogue SCRC-21406 (FERM P-15693)], a bacterium belonging to the genus Pseudoalteromonas [e.g. Pseudoalteromonas SCRC-21416 (FERM P-15935)], a bacterium belonging to the genus Vibrio [e.g. Vibrio marinas (ATCC 15381)] in a culture medium containing peptone, a yeast extract, artificial seawater, etc., shaking and culturing the bacterium at 8°C for about 48 hr, centrifugally removing the cells of the bacterium, and collecting the supernatant.
