To provide a control system and a control method of a rice milling mechanism capable of saving man-power in rice-milling processing.SOLUTION: A control system 100 of a rice-milling mechanism which is automatically controlled includes: a quality data storage part 2 in which a plurality of pieces of quality data are stored; a rice milling part 4 capable of milling grain based on one or a plurality of pieces of the quality data selected from the plurality of pieces of the quality data; a standard value calculation part 40 which calculates a decision standard of rice milling processing completion on the rice milling part 4; and a server part 1 which controls at least one of constitutions including the quality data storage part 2, the rice milling part 4 and the standard value calculation part 40.SELECTED DRAWING: Figure 3
