Abstract:
The purpose of the present invention is to provide: a sweetness and/or flavor enhancer which makes it possible to obtain a feeling of satisfaction when eating even when the amount of sugar in a food/beverage product has been reduced; a food/beverage product which contains the enhancer; and a method for enhancing the sweetness and/or flavor of the food/beverage product. Provided is a sweetness and/or flavor enhancer which contains, as an active ingredient: one substance alone from among 4-methylpentanoic acid, cyclotene, and a C8-12 saturated aliphatic monocarboxylic acid; a combination of two or three of said substances; or a combination of said substances and naringenin or glutamyl valyl glycine. Also provided is a food/beverage product which contains said enhancer and a component for imparting sweetness and/or a component for imparting flavor. Further provided is a method for enhancing the sweetness and/or flavor of the food/beverage product which involves adding any of said active ingredients to a food/beverage product which contains a component for imparting sweetness and/or a component for imparting flavor.
