Abstract:
The present invention addresses the problem of providing: a sugar composition suitable for a cyclic tetrasaccharide-containing starch syrup which has low viscosity, low water activity, and low colorability, which is low in calories, and which is not prone to deposition of sugar crystals during storage; the use thereof; and a production method therefor. The problem is solved by providing: a sugar composition that contains cyclic tetrasaccharide; the use thereof; and a production method therefor, wherein the sugar composition has the following features (1) to (3): (1) when the sugar composition contains branched cyclic tetrasaccharide in addition to the cyclic tetrasaccharide, and glucoamylase and α-glucosidase are caused to act on the sugar composition, the cyclic tetrasaccharide content, based on anhydride content, is not less than 38 mass% of all solids in the resulting sugar composition; (2) α-1,4-linked glucose accounts for more than 9% and not more than 15% of all glucose residues of the sugar composition according to methylation analysis; and (3) α-1,4,6-linked glucose accounts for less than 6% of all the glucose residues of the sugar composition according to methylation analysis.
