Abstract:
Disclosed in the present invention is a pear juice processing method, comprising the following steps: (1) cleaning fresh pears, peeling same, removing cores, pulping same, boiling the obtained pulp, and then filtering same with a sieve mesh, so as to obtain juice 1 and pulp residues; (2) adding water to the pulp residues for residue washing, boiling the water obtained after residue washing and the pulp residues together, and filtering same with a sieve mesh to obtain juice 2; (3) after mixing the juice 1 and the juice 2, boiling same again, and filtering same with a sieve mesh to obtain juice 3; (4) stirring the juice 3, and then feeding same into a homogenizer for homogenization; (5) after filling of the homogenized juice is performed, carrying out preliminary sterilization by means of a pulse electric field; and (6) carrying out secondary sterilization on a preliminarily sterilized product by means of heat-ultrasound treatment. The pear juice processing method of the present invention is simple and suitable for continuous and large-scale production in factories; obtained products have higher quality, excellent color stability and turbidity stability and extremely low nutrition loss, are less prone to browning, and have long shelf life and good taste, thus providing powerful technical means for deep processing of pears.
