Abstract:
A method for producing plant-based cheese using almonds, according to one embodiment of the present invention, comprises: an almond washing-soaking-peeling process of sorting/washing almonds to peel off the skin; an almond squeezing process of preparing almond milk by squeezing the almonds after the almond washing-soaking-peeling process; a protein enrichment process of enriching almond protein in the almond milk that has been squeezed out in the almond squeezing process; an almond milk fermentation process of preparing plant-based fermented almond milk by using plant-based lactic acid bacteria in the almond milk that has been prepared in the protein enrichment process; a raw material weighing and adding process of weighing the almond milk prepared by the almond milk fermentation process, coconut oil, modified starch, a stabilizer, an acidity regulator, salt, and a paprika extract; a sterilization and emulsification process of cooking, emulsifying, and sterilizing the raw materials weighed in the raw material weighing and adding process by putting same into a cheese cooker; a cold packaging process of transferring the emulsified and sterilized liquid in a colloidal state prepared through the sterilization and emulsification process to a packaging machine and packaging/cooling same; and an aging process of aging the plant-based cheese prepared through the cold packaging process.
