Abstract:
A method for processing soybean by using an enzyme. Soybeans are soaked in water and then boiled. After cooling, water and a pectinase produced by a microorganism belonging to the genus Bacillus are added to the soybeans to give a first mixture. Then this first mixture is treated with the enzyme by maintaining under stirring for a definite period of time to thereby give a slurry in which individual soybean cells are dispersed. After the completion of the enzymatic treatment, the pectinase is inactivated. Next, a powder obtained by processing beans other than soybean (pea, etc.) is added to the slurry to give a second mixture. The second mixture is dried by airflow drying or spray drying to give a powdery processed soybean product. Alternatively, a liquid processed soybean product can be obtained by omitting the steps following the inactivation of the pectinase.
