Abstract:
A method for preparing V-type crystalline starch, relating to the fields of food and chemical engineering. In the method, starch is used as a raw material, a dry-heat amorphization technology is adopted to replace conventional thermal gelatinization, to fully decluster starch to obtain high-concentration starch, thereby improving the grading efficiency, and graded starch having different polymerization degrees is obtained by means of alcohol precipitation grading. Flavor molecules having different chain lengths and functional groups are screened as guest substances, amylose having high content, high fluidity and high solubility in an acidic solvent environment provided by plasma activated water has more single-helix cavities and provides more sites to capture the guest substances, and joint variable-frequency ultrasound assists in increasing the dispersion degree and the contact opportunity of the flavor molecules in starch suspension, and promoting recombination of a starch crystallization region, thereby obtaining V-type crystalline starch having a higher degree of crystallinity, a larger crystallite size and more compact single-helix ordered arrangement.
