Abstract:
Provided is a method for preparing RS3 type resistant starch by means of "extrusion-debranching", which is a method for preparing functional food type resistant starch and belongs to the technical field of functional food. The method for preparing RS3 type resistant starch by means of "extrusion-debranching" comprises the following steps: adding a starch raw material to a twin-screw extruder, carrying out primary extrusion, collecting the extruded, gelatinized and degraded starch, and drying and crushing same; and fully mixing the crushed and gelatinized starch with pullulanase, adding same to the twin-screw extruder, carrying out secondary extrusion, collecting the extruded debranched starch, recrystallizing same, carrying out centrifugal washing, collecting the precipitate, and drying same to obtain RS3 type resistant starch. By means of the method, rapid and efficient debranching of starch with a high substrate concentration is achieved, the content of RS3 type resistant starch is increased, and the problem of the low output efficiency of RS3 type resistant starch is solved; and a theoretical basis and actual guidance are provided for continuous industrial production of resistant starch.
