Abstract:
A method for modifying wheat gluten by means of lactylation, and wheat gluten obtained thereby. The method comprises dispersing wheat gluten in a lactic acid solution or an aqueous solution containing sodium lactate, and modifying the wheat gluten by means of lactylation. The internal structure of the gluten molecule is changed, and the solubility and emulsibility are improved.
