Abstract:
The purpose of the present invention is to provide a method for advantageously manufacturing a protein molded body, the method making it possible to resolve problems arising due to esterification of hydroxyl groups contained in a protein while maintaining adequate strength. The method for manufacturing a protein molded body according to the present invention comprises a step for hydrolyzing an ester group by bringing the ester group into contact with an acidic or basic medium, while applying tensile force to a raw material molded body including a protein in which hydroxyl groups are esterified.
