Abstract:
Provided are a method for manufacturing chocolate and a device for manufacturing chocolate that have superior production efficiency in molding and cooling steps and can achieve the provision of a plurality of molding and cooling lines in a small space.
The method for manufacturing chocolate (excluding, here, a method for manufacturing that carries out mold transport) includes: a first molding step for molding chocolate stock solution on a first conveyor belt; a second molding step for molding chocolate stock solution on a second conveyor belt provided in a stage above the first conveyor belt; and a cooling step in which chocolate is obtained by passing the chocolate stock solution that has been molded on the first and second conveyor belts through a plural stage conveyor belt type cooling device through which at least the first and second conveyor belts can pass, and cooling and hardening the same. The first molding step uses a rotary molding machine having a rotating roll in which a plurality of openings that can discharge chocolate stock solution are formed in the surface to mold the chocolate stock solution into chip shapes on the first conveyor belt.
