Abstract:
This measurement system comprises: a light source; a projection fiber that irradiates a fat layer part of meat that is a measurement subject with first light from the light source; a light-receiving fiber that is provided at a distance from the projection fiber and receives second light output from the fat layer part of the meat irradiated with the first light; and a fat layer thickness derivation unit that derives a measured thickness which is the thickness of the fat layer part of the meat on the basis of a calibration model and an absorbance of the second light near the absorption wavelength of fat. The calibration model is information as a result of correlating a reference thickness that is a thickness of a fat layer part of a reference meat with an absorbance of light output from the fat layer part of the reference meat irradiated with light generated from the light source near the absorption wavelength of fat.
