CLAIMS

1. The invention relates to a purple food additive/supplement embodiment that contains red and purple fruits and vegetables and is used in the fields of bakery product, food supplement, and food additive, and it is characterized by comprising of the following procedure steps;

- Mixing red and purple fruit and vegetable concentrates, wheat starch, corn starch, potato starch, rice flour, vegetable fiber, tapioca flour, arrowroot powder in a spiral dough mixing bowl,

- Diving the dough obtained into small pieces with the help of hand, and thinly laying on Teflon-coated trays having a hole in the bottom,

- Drying in a drying room that is set at 50-100°C for 10-20 hours, preferably until the humidity rate drops below 3%,

- Pulverizing through grinding the products that are collected at the end of drying with a 1000 micron sieve in a hammer mill.

2. The invention relates to a purple food additive/supplement embodiment that contains red and purple fruits and vegetables and is used in the fields of bakery product, food supplement, and food additive, and it is characterized by comprising of the following procedure steps;

- Taking the extracts, which consist of one or more combinations of red and purple fruits and vegetables that contain anthocyanins to be purified, to the purification column,

- Taking the resins in cross-linked polystyrene structure to the purification column by being washed and cleaned with distilled water,

- Taking the mixture, which contains red-purple fruit and vegetable extracts that are prepared in the purification column, into the extract tank,

- Discharging the water, which remains after the mixture in the extract tank is adsorbed with the resins in the optimum time, as waste, Washing, rinsing, and cleaning the resins that have retained (absorbed) the target molecules of the extracts in the purification column,

- Taking ethanol into the extract tank for the desorption process,

- Passing the target molecules of the extracts in the resins into the ethanol by being desorbed for a certain period,

- Obtaining alcohol solution containing anthocyanin that is purified from red, purple fruit and vegetable extracts through passing all anthocyanins, which have been purified by being subjected to final desorption process with ethanol in the extract tank, - Removing anthocyanins, which are obtained by purification method from the alcohol solution that is taken from the extract tank, and ethanol in the evaporator,

- Pulverizing the anthocyanins, which are sufficiently concentrated and from which the ethanol is removed, in the spray dryer after being taken from the evaporator, and then obtaining the product through drying in the spray dryer by adding maltodextrin to the purified and then condensed anthocyanin extract.

Technical Field

The invention relates to a purple food additive/supplement embodiment that is used in the fields of bakery products, food supplements, and food additives that are containing red and purple fruits and vegetables (such as Pomegranate, Blackberry, Black Carrot, Cherry).

The invention, in particular, relates to a purple food additive/supplement that contains extracts of red and purple fruit and vegetable (such as Pomegranate, Blackberry, Black Carrot, Cherry, etc.) concentrates, wheat starch, corn starch, potato starch, rice flour, vegetable fiber, tapioca flour, arrowroot powder, resins found in the structure of cross-linked polystyrene, ethanol, and maltodextrin.

Known Status of Technique

Food additives/supplements are an effective way to intake the essential vitamins, minerals, and other important nutrients at the daily recommended dose to optimize your health. It is not always possible to intake all nutrients due to the factors such as compulsory living conditions, lack of access to organic foods, and exclusion of certain foods from the diet due to allergy/intolerance cases. You can support your diet with food supplements. Here, I must also state that the production of food supplements does not intend to replace organic foods. Today, food supplements contain vitamins, minerals, amino acids, enzymes, plant seeds, and many other nutritional components as a whole. These supplements are sold in many different options, including conventional tablets, capsules, powders, and liquid forms, and supplements that are added to the other products. Although there are purple supplements that are mixed with flour in the current technique, these products are not capable of providing the desired benefit since there is not enough R&D study performed in their mixture values and preparation.

In a conclusion, for the solution of the above-mentioned problem in the current technique, the requirement for a new economical, useful purple food additive/supplement and the inadequacy of the current solutions have made it compulsory to improve in the relevant technical field.

Purpose of the Invention

The present invention relates to a purple food additive/supplement embodiment that is used in the fields of bakery products, food supplements, and food additives that are containing red and purple fruits and vegetables (such as Pomegranate, Blackberry, Black Carrot, Cherry) and that have been developed to eliminate the above-mentioned disadvantages and bring new advantages to the relevant technical field.

The most important objective of the invention is to play a role in sugar balancing in diabetes and to regulate blood glucose. In the studies performed, the participants were asked to consume 70 grams of white bread and 150 ml of drinking water, and the other group was asked to consume 70 grams of purple bread prepared with 8% of the invention and 150 ml of drinking water. It was seen in this study that the blood glucose of the individuals who consumed purple bread did not exhibit a rapid increase compared to white bread, and a much lower blood glucose value was measured. People who are aged 45-65 years and with type 2 diabetes participated in another study. The individuals who participated in this study were told not to make any changes in their daily lives, but to consume only purple bread instead of white bread. A significant decrease and stabilization in blood glucose of the individuals who regularly consumed purple bread were observed. Blood glucose values that started from 180 on average dropped to 130 over time, and blood glucose imbalances disappeared significantly. Furthermore, the anti-diabetic characteristic of purple bread contained in the invention originates from its suppression of alpha-amylase and thus ensuring a slower rise in blood glucose after consumption. Another objective of the invention is to balance blood pressure. Patients with hypertension problems also stated that they stopped their hypertension medicines at the end of the 2nd month.

Another objective of the invention is to increase the killing power of cancer cells depending on the dose increase of anthocyanins. In the studies performed, anthocyanin was added to the invention at different rates, and cell growth curves were observed. At the end of the 72nd hour, it is seen that anthocyanins, particularly at a dose of 500 microgram/ml, do not exhibit any toxic effect on control cells, but selectively kill human glioblastoma cells that cause brain cancer.

Another objective of the invention is to increase the reproduction rate. Under normal conditions, while 5 males and 5 females lay a maximum of 67 eggs, they were able to lay up to 393 (about 6 times) eggs in the presence of increased anthocyanin in the medium. This result shows us that anthocyanins increase physical strength and therefore the reproduction capacity.

Another objective of the invention is the stabilization of blood glucose. It is seen that diabetic patients can adjust their blood glucose more easily when they regularly consume purple bread and that their sugar is stabilized at 130 blood glucose levels on average.

Another objective of the invention is to increase the electrical activity of the brain. When purple bread is consumed regularly for 2 months, there is a significant increase in all frequency bands of the brain. In particular, the increase in the Gamma frequency indicates an increase in cognitive functions. The increase that is observed in all frequency bands indicates that the cerebricity increased. Another objective of the invention is that the anthocyanins protect from cardiovascular diseases.

Another objective of the invention is to stop the development of obesity.

Detailed Description of the Invention

In this detailed statement, the preferred embodiment of a purple food additive/supplement is only explained for a better understanding of the subject and without causing any limiting effect.

Our invention, which is a food ingredient, can be used for the purpose of adding functional feature, enriching the following and for developing new product; coffee, cocoa; coffee or cocoa-based drinks, chocolate-based drinks, fruit and vegetable juices, fruit and vegetable nectar, fruit flavoured fizzy/still beverages, pastas, ravioli, noodles, pastry and bakery products, desserts, bread, bread types, bagels, pastries, pita bread , pizza, sandwiches, crisp flaky pastry, patty, cake, baklava, kadayif, desserts with syrup, pudding, milk pudding, cauldron, rice pudding, cheesecake, honey, royal jelly, propolis, food flavourings, vanilla, spices, sauces including tomato sauces, yeasts, baking powders, all kinds of flour, semolina, starch, granulated sugar, cube sugar, icing sugar, teas, ice teas, candies, chocolates, biscuits, crackers, wafers, chewing gums, ice creams, edible ice, salt, grain (cereal) snacks, popcorn, oatmeal, corn chips, breakfast cereals, processed wheat, barley, oats, rye, rice, molasses, medicines for human and animal health, medicinal and veterinary purposed chemical products, chemical radioactive substances for medical and veterinary purposes, cosmetics containing medicines. Dietetic substances appropriate for medical and veterinary purposes, dietary supplements for humans and animals, food (nutritional) supplements, medical preparations for weight loss purposes, baby foods, medicinal plants and herbal beverages for medicinal purposes, products for dentistry (excluding instruments/devices), dental filling materials, tooth mold removal agents, prosthetic and artificial tooth bonding and repair agents, hygiene products; pads, tampons, medical patches, dressing materials, clothes for children, adults and pets made of paper and textile, harmful insect, harmful plant, fungicidal and rodent-destroying agents, deodorants excluding those for humans and animals, air-purifying and deodorizing agents, disinfectants, antiseptics (microbicides), medical purposed detergents, medicated soaps, disinfecting soaps, antibacterial hand lotions.

Our invention, as can be understood from its name, contains extracts of red and purple fruit and vegetable (such as Pomegranate, Blackberry, Black Carrot, Cherry, etc.) concentrates, wheat starch, corn starch, potato starch, rice flour, vegetable fiber, tapioca flour, arrowroot powder, resins found in the structure of cross-linked polystyrene, ethanol, and maltodextrin.

Natural wheat starch is a type of starch that is produced as a by-product when obtaining vital wheat gluten from wheat. It can also be defined as gluten-free wheat flour. The amylase rate in wheat starch is 28%, and the amylopectin rate is approximately 72%. Although the average granule size is 10 microns, the granule diameters vary between 1 and 40 microns. When the degree of gelling is compared to the other natural starches, it is observed that the natural wheat starch begins to gel at much higher degrees.

Corn starch is a starch that is obtained from corn (maize) grains. Starch is obtained from the albumen of grains. Cornstarch is a very popular food ingredient that is used to thicken sauces and soups, and to make corn syrup and other sugars.

Potato starch is starch that is obtained from potatoes. The cells of the root tuber of the potato plant contain leucoplasts. To extract the starch, the potatoes are crushed and the grains of the starch is released from the destructed cells. The starch is then washed and dried.

Rice flour is a type of flour that is made from finely ground rice. It is different from the rice starch that is usually produced by soaking the rice in lye. Rice flour is a common substitute for wheat flour. Since it prevents liquid disintegration, it is also used as a thickener in chilled or frozen recipes.

Fiber plants are expressed as a group of plants from which fiber is obtained from any of their organs (stem, leaf, seed, etc.). Although it is known that the most important problem of today is nutrition, the need for fibers, particularly in terms of textiles and apparel depending on clothing and sheltering, is not less than the need for nutrition.

Tapioca is a starchy product that is made from cassava tubers. These tubers are identical to Brazil and a major part of South America. Tapioca is available as flour, meal, flake, and pearl. Tapioca pearls are mostly used to make tapioca pudding and bubble tea, and they are also used as a thickener. Tapioca is almost completely starchy carbohydrates. People who limit their carbohydrate consumption or who are concerned about how starches affect their blood glucose levels may perceive tapioca as unhealthy. Tapioca is at a high position on the glycemic index scale. The glycemic index measures how quickly the blood glucose levels rise after eating. Tapioca is gluten-free, nut-free, and grain-free. It does not cause problems for people with celiac disease, gluten sensitivity, and nut allergies. Tapioca flour is found in many gluten- free products and is a good option for allergen-free cooking at home. Furthermore, it is an alternative to white flour for soups, sauces, and pie fillings.

Arrowroot powder is a white, flavoring powder that is used to thicken sauces, soups, and other foods. Arrowroot powder is comprised of starches that are extracted from various tropical tubers such as the arrowroot plant and cassava.

Ethanol is a colorless, slightly sweet-scented, and flammable liquid. It is the only type of alcohol that is used in alcoholic beverages. Furthermore, it is used as a solvent. Its chemical formula is C2H6O and it is also expressed as EtOH or C2H5OH.

Maltodextrin is a polysaccharide that is used as a food additive. It is produced from herbal starch through partial hydrolysis and is usually found as a powder dried with white hygroscopic spray. Maltodextrin is easily digestible, is absorbed as quickly as glucose, and can be reasonably sweet or nearly tasteless.

Our mentioned invention - the anthocyanins - contains very special components that are generally obtained from the peel or the whole fruit of purple vegetables and fruits. When these components are consumed regularly, the anthocyanins protect from cardiovascular diseases, prevent cancer development, stop the development of obesity, play a role in sugar balancing in diabetes, regulate the blood glucose, and exhibit anti-inflammatory effects, and the number of relevant publications exceeds 12.000.

A preferred embodiment of our invention is comprised of the following procedure steps;

- Mixing red and purple fruit and vegetable (such as Pomegranate, Blackberry, Black Carrot, Cherry) concentrates, wheat starch, corn starch, potato starch, rice flour, vegetable fiber, tapioca flour, arrowroot powder in a spiral dough mixing bowl,

- Diving the dough obtained into small pieces with the help of hand, and thinly laying on Teflon-coated trays having a hole in the bottom,

- Drying in a drying room that is set at 50-100°C for 10-20 hours, preferably until the humidity rate drops below 3%,

- Pulverizing through grinding the products that are collected at the end of drying with a 1000 micron sieve in a hammer mill.

Another preferred embodiment of our invention is comprised of the following procedure steps;

- Taking the extracts, which consist of one or more combinations of red and purple fruits and vegetables such as pomegranate, blackberry, black carrot, cherry that contain anthocyanins to be purified, to the purification column, - Taking the resins in cross-linked polystyrene structure and preferably in AB-8, D-101 , DM-21 types to the purification column by being washed and cleaned with distilled water,

- Taking the mixture, which contains red-purple fruit and vegetable extracts that are prepared in the purification column, into the extract tank,

- Discharging the water, which remains after the mixture in the extract tank is adsorbed with the resins in the optimum time, as waste,

- Washing, rinsing, and cleaning the resins that have retained (absorbed) the target molecules of the extracts in the purification column,

- Taking ethanol into the extract tank for the desorption process,

- Passing the target molecules of the extracts in the resins into the ethanol by being desorbed for a certain period,

- Obtaining alcohol solution containing anthocyanin that is purified from red, purple fruit and vegetable extracts through passing all anthocyanins, which have been purified by being subjected to final desorption process with ethanol in the extract tank,

- Removing anthocyanins, which are obtained by purification method from the alcohol solution that is taken from the extract tank, and ethanol in the evaporator,

- Pulverizing the anthocyanins, which are sufficiently concentrated and from which the ethanol is removed, in the spray dryer after being taken from the evaporator,

- Obtaining the product through drying in the spray dryer by adding maltodextrin to the purified and then condensed anthocyanin extract.

In the mentioned invention, Adsorption means the adsorption of anthocyanins on resins; and Desorption means washing the anthocyanins attached by the Adsorption procedure with ethanol and extracting from the resins. In the mentioned invention, red and purple fruits and vegetables are pomegranates, blackberry, black carrot, sour cherry, elderberry, Aronia, acai berry, sweet potato, black rice, purple potato, red potato, maqui berry, black mulberry, raspberry, cranberry, currant, cherry, blueberry, wild cherry, and gojiberry. It is therefore obvious that such embodiments will not accommodate the criterion of overcoming novelty and in particular the known status of art.
