Abstract:
The present invention addresses the problem of providing: an α-glucan mixture having an appropriate range of molecular weight, wherein when the α-glucan mixture is molded into an edible film, the resulting film is transparent and has exceptional strength and water-solubility even when no plasticizer is added thereto; and an application for said α-glucan mixture. The present invention overcomes the problem by providing: an α-glucan mixture obtained by a production method that comprises a step for gelatinizing a waxy starch and activating and liquefying an amylase, wherein the α-glucan mixture has features (1) and (2) described below; and an application for said α-glucan mixture: (1) The weight-average molecular weight (Mw) is within the range of 150-3,000 kDa; and (2) the value (Mw/Mn) obtained by dividing the weight-average molecular weight (Mw) by the number-average molecular weight (Mn) is 35.1 or less.
