Abstract:
This dark meat separation device (1) comprises: an ankle holding part (2) for holding the ankles (A) of poultry dark meat (M); a meat pressing part (3) which presses a meat section (Mp) adjacent to the ankles (A); a meat insertion part (5) which is inserted between the tibia and the meat section (Mp) pressed by the meat pressing part (3) and separates the meat section (Mp) from the tibia; and a meat cutting part (6) for cutting the vicinity of the ankles (A) of the meat section (Mp).
