A cooking control method of an electric cooker, and an electric cooker. The method comprises: before an electric cooker enters a boiling stage, adjusting the heating mode of a first heating assembly (2), a second heating assembly (3) and a third heating assembly (4), such that the upper-layer temperature of a food material in a cooker body (1) is higher than the lower-layer temperature (S1); and when the electric cooker is in the boiling stage, adjusting the heating mode of the first heating assembly (2), the second heating assembly (3) and the third heating assembly (4), such that the food material in the cooker body (1) is changed from the upper-layer temperature being higher than the lower-layer temperature to the lower-layer temperature being not lower than the upper-layer temperature (S2). After the electric cooker enters the boiling stage, the heating temperature of a bottom part and a side corner area are gradually increased, so that rolling and boiling of rice grains in a pot are promoted, the rolling state of the rice grains is optimized, and the gelatinization degree and uniformity of rice are improved.
