Abstract:
The present application provides a composition, comprising a wall material and γ-aminobutyric acid. The wall material is selected from one or two or more of β-cyclodextrin and derivatives thereof, maltodextrin, starch, chitosan, and glucose. The composition of the present application can prevent the γ-aminobutyric acid from generating a Maillard reaction with a reducing sugar or a carbonyl compound under the action of water, thereby not generating a brown or brown black macromolecular substance, and further not causing the color change of a product.
