Abstract:
A composite food ink suitable for high-precision printing and a 3D printing method. The composite food ink comprises the following components in percentage by mass: 10-30% of soybean protein isolate dry powder, 1-5% of xanthan gum dry powder, 14-16% of rice starch, and the balance is water. The composite food ink is prepared by employing the following preparation method: (1) fully mixing soybean protein isolate dry powder and xanthan gum dry powder, then adding water at room temperature, and uniformly stirring to obtain a soybean protein isolate and xanthan gum mixture; and (2) adding rice starch dry powder into the soybean protein isolate and xanthan gum mixture, kneading, and uniformly mixing to obtain soybean protein isolate-rice starch-xanthan gum composite food ink suitable for printing microfilament width of ≤100 μm. By using the described technical solution, hundred-micron-level microfilament printing can be achieved, and the external visual attractiveness and mouth feel of printed food are greatly improved.
