Abstract:

To provide a method for pulling out the tendon of an edible bird capable of pulling out the tendons continuously in a good efficiency from many slaughtered bodies of the edible birds.

This method for pulling out the tendon of the edible bird is provided by biting the tibia of the slaughtered body of the edible bird of which head part is directed in lower direction to a first pair of discs 11 overlapped by taking a prescribed distance and rotating in one direction and a second disc 12 part of which is inserted between the gap of the pair of the first discs 11 and rotating in reverse direction to the first disc rotating direction, from the upper stream of the rotating direction of the first discs and second disc, cutting the tibia S1 of the slaughtered body of the edible bird and also engaging the tendon S4 of the slaughtered body of the edible bird to the circumferential edge part of the second disc 12 and pulling out the tendon S4 from the lower leg part S2 and thigh S3 of the slaughtered body of the edible bird.
